“Expanding Your Scope of Dietetic Practice: Food Allergy Consulting”
Speaker #1 (6-7 pm)
Kathleen Silverman, founder
and director of ELL Foundation (Eat, Learn, Live) in Chicago, IL and Roberta
Jenero, MS, RD, LD will present information on the ELL certification program
for dietitians who are interested in consulting with school districts,
families, and others who are dealing with food allergies. They will give an
overview of the training modules used in their PAC (Protect Allergic Children)
services, and the certification training (which is available for 6 CE credits
through ADA). They will discuss the opportunities for RDs to expand their scope
of practice in this field. The presentation will by made through a Skype
webcast, and will be of particular interest to RDs working in school foodservice,
WIC, clinical, or any type of counseling with families faced with meal planning
to accommodate food allergies.
Speaker #2 (7-8 pm)
Heidi Robel, ND and
instructor at YVCC, will present information on major types of food allergies,
prevalence, testing procedures, and elimination diets following allergy
diagnoses. She will share experiences from her naturopathy practice in Yakima
and will give us a glimpse of an alternative medicine approach to dealing with
food allergies.
